Based on frequent requests from the guests, Chef Wayan has put together a delightful selection of bridges’ dinner dishes as a Tasting Menu.

Carefully designed to allow diners to taste bridges’ cuisine at its best, the six course menu features an irresistible combination of all-time favorites and new creations, paired with (optional) wines selected by the sommelier to enhance the experience.

The newly introduced Tasting Menu once again confirms bridges as the best casual fine dining restaurant in Ubud.

The tasting experience is available as vegetarian version as well. The portions are sized to allow maximum pleasure and keep the taste buds happy all the way to the end of the menu.

Thai-Style Barramundi Recipe

Serves 1

INGREDIENTS 

  • 1 thyme sprig, leaves picked
  • ½ a clove garlic, crushed
  • Salt and pepper, to taste
  • ½ a lemon, juice only
  • ½ tbsp olive oil
  • 1 x 180g barramundi fillet
  • ½ tbsp sesame seeds
  • ½ tbsp coriander seeds, coarsely crushed
  • ½ tbsp oil

To serve:

  • Chilli jam
  • Cucumber slices

METHOD
Mix together the thyme leaves, crushed garlic, salt and pepper, lemon juice and oil and marinate the fish fillet in the mixture for
20 minutes.

Place the sesame seeds and crushed coriander seeds in a shallow dish and use to crust the marinated fish fillet. Heat the oil in a small frying pan set over high heat and briefly sear the fillet until the seeds are a light golden colour.

Transfer to the oven and bake for 10 minutes.

Serve immediately with the chilli jam, cucumber slices and steamed rice or salad.

bridges’ Ginger-Lemongrass Mojito Recipe

There is a cocktail for every occasion, for any time of the day. And our bar team really knows how to mix them, when to shake and when to stir. Put them to test at your next visit. Here an easy recipe for you to try at home, a favorite of our guests, the Ginger-Lemongrass Mojito.

Ingredients

  • light rum, 60ml
  • fresh lemongrass, about half a stalk, sliced
  • fresh ginger, 2-3cm, sliced
  • lime wedges, one lime
  • mint leaves, 20-15 leaves
  • sugar, 2 teaspoons
  • lemonade, Sprite or similar, about 40-60 ml
  • crushed ice, approx. one cup
  • ice cubes, 3-4 pieces
  • lemongrass juice, 45ml

How to mix

  • in a mixing cup, muddle lemongrass, ginger and sugar
    (be careful if you use glass, it might break easily)
  • when well muddled, add lime, mint and muddle some more
  • add the rum
  • add lemongrass juice
  • add the ice cubes
  • shake well
  • double strain
  • pour in a high ball glass, add crushed ice and top with lemonade
  • garnish with lemongrass stalk and mint leaves
